Hard to believe Christmas is less than a week away! I know there's nothing like baking in the kitchen to bring on that holiday cheer! I don't really bake all year and come Christmas, I'm in the kitchen making up for the whole the year! 🤣 So when my friend Kelly at The Tattered Pew asked me to join her Christmas Cookie Blog Hop, I was excited to join! I'm sharing a recipe I found scrolling through Instagram one day and the most beautiful video popped up from Bakingthegoods.com. Cardamom Coconut Snowflake Cookies. After making the first batch I wanted something a little softer in taste so I changed one ingredient. Swapping the Cardamom in the icing for Cinnamon.

The only thing that I changed in this recipe (it's listed on the ingredients) was Cinnamon in the icing instead of Cardamom. After making these the way the recipe called for, the Cardamom has a very strong flavor. If you've never tasted it before I would say it's similar to all spice or cloves. It's delicious in the cookie but a little too much for my liking in the icing. Cinnamon tasted perfect!
It's always fun to see how excited the kids get when we bake! They want to be right in the middle of it all and help all of the way. With 4 of them in the mix of baking things got very messy and taking pretty during photos just wasn't happening! It's okay though, I think we all know what it looks like. 😉
I could only find mixed colors of sparking sugar at Target that had white & gold so my cookies have a little more color than the all white snowflake. I mixed the two sparking sugars together and it worked just fine! The coconut flakes add such a beautiful texture to the top of the cookies! These really are delicious and pretty!
